A JEWISH SEDER

The table is set with a Seder plate, containing matzah, bitter herbs and other items of symbolic significance in the arrangement shown below.

Matzah -3 whole matzahs are placed on top of each other, separated by a cloth or napkin.
It must be eaten 3 times during the Seder, by itself, with maror, and as the afikoman. One for Kohen, one for Levi and one for Israel.

Maror or Chazeres -Bitter herbs are eaten twice during the Seder, once by themselves and a second time with the matzah. The Talmud lists several vegetables that qualify as maror. The most common items are lettuce for chazeres and horseradish for maror. Maror represents the bitter times.

Charoses -the bitter herbs are dipped in charoses, a mixture of grated apples, nuts, other fruit, cinnamon and other spices, mixed with red wine. The charoses has the appearance of mortar to symbolize the lot of the Hebrew slaves, whose lives were embittered by hard labor with brick and mortar.

-On the Eve of Passover in the Holy Temple in Jerusalem, two sacrifices were offered and their meat roasted and eaten at the Seder feast. To commemorate these two sacrifices a roasted bone (with some meat on it) and a hard-boiled egg are placed on the Seder plate. The egg, e symbol of mourning, is used in place of a second piece of meat as a reminder of the mourning of the destruction of the Temple.

Karpas -a vegetable (celery, parsley, boiled potato) other than bitter herbs completes the Seder plate. It is to be dipped in salt water and eaten. (The salt water is not put on the Seder plate, but should be prepared beforehand, and placed near the Seder plate. Karpas represents the newness, the green and the fresh. Salt water represents the tears shed in Israel.

Leavened food is prohibited during Pesach

After Pesach up until the festival of Shavuot there is a period, which is briefly referred to as the period of the Sefira (the counting).
This connection between these two festivals impress the release from physical bondage and the political freedom that is represented by Pesach, does not constitute complete freedom unless it culminates in the spiritual restraints, disciplines and duties represented by Shavuot. (Shavuot celebrates the giving of the Ten Commandments, God’s revelation to Israel, and Israel’s acceptance of the Torah.) There is a period of 33 days of the Sefira, which is observed in mourning, in remembrance of the many thousands of disciples of Rabbi Akiva who in the second century are said to have perished in a plague. During these 33 days no weddings are conducted, haircuts are not taken, and dances and dinners with music are forbidden.
